Featured Cheeses: American Artisan Cheeses!

American Cheese MonthTo celebrate American Cheese Month, Gourmet Cellar will be featuring a different American-made artisan cheese every week thought the month of October.

A cornucopia of wonderful cheeses will be arriving, like Sequatchie Cove Creamery’s Cumberland. It’s a rustic raw cow’s milk cheese from Tennessee inspired by the French “tomme de Savoie” that’s aged 90 days with a natural rind of wild yeasts and molds. It has a buttery, earthy flavor with an herbaceous tang and a nutty, crystalline (the Tyrosine amino acid clusters are signs of a well-aged cheese) texture. *Cook’s note: save your hard cheese rinds in the freezer to add to stocks and soups.

I took Lauren with me to California in late September on a brief buying trip. There we discovered several new products we’ll be getting in in November. One early arrival is this wonderful summer sausage from our favorite charcuterie producer.  Summer may be over, but you can still enjoy summer sausage. Olympia Provision’s addictive savory summer sausage is a great after-school or work snack on its own but also pairs with everything from scrambled eggs, to pizza, to your next grilled cheese sandwich. We think you’ll love this tangy sausage that’s mildly spiced with mustard and garlic.

Another new discovery. Oregon Growers sources farm-direct seasonal fruit for their jams including Pear & Hazelnut. Pear & Hazelnut Jam is made with chunks of fresh Bartlett pears, crunchy bits of hazelnuts, cinnamon and lemon zest and is equally at home on toast and game roasts. Recipe: Grilled Cheese Sandwich

sandwichCelebrate American Cheese Month by trying various grilled cheese sandwich recipes. Submit your favorite to our American Grilled Cheese Recipe Contest. Source your favorite cheese (preferably an artisan variety from The Gourmet Cellar) and other locally available ingredients to create your recipe and email it to: debbie@thegourmetcellar.com by the end of October. The winner will earn a $20 gift certificate to The Gourmet Cellar and their recipe will be featured on Uncorked’s menu.

Think outside the bread box; experiment with unexpected combinations. Brioche with Oregon blue cheese, apples, lingonberry  jam and shaved dark chocolate. Sourdough bread drizzled with roasted garlic avocado oil. Layer Sequatchie Cove Creamery’s Cumberland cheese, Pear & Hazelnut Jam, prosciutto and the last of your summer tomatoes. Spread soft American goat cheese, walnut Dijon, arugula and thinly sliced summer sausage between buttered wholegrain bread slices in your waffle iron or panini press… Why not have a grilled cheese sandwich tasting dinner party and have guests vote on their favorite?
